Glycerol monolaurate/GML, CAS 142-18-7, white powder with an assay of 90.0 % minimum, in 25 kg drums. Free acid is limited to 2.5 % at most and free glycerol to 7.0 % at most.

An ester of glycerol and lauric acid, it works as an emulsifier in food formulations and in other preparations where a surfactant is useful. The free acid and free glycerol levels help place its composition before trials in a formula.
