White crystals or crystalline powder of sodium bicarbonate, assay 99.0 to 100.5 % on dry basis, in 25 kg bags. The pH of a 1 % solution is 8.6 at most and loss on drying is 0.20 % at most.

An alkaline salt, it serves as a raising agent in bakery, a pH regulator in beverages and powdered preparations, and a component of effervescent mixes. Bakery companies and formulation workshops compare the dry-basis assay, the solution pH and the loss on drying.
