Sodium hexametaphosphate/SHMP, white powder or granules, total phosphate 68.0 % minimum as P2O5. Inactive phosphate, as P2O5, is 7.5 % at most and iron (Fe) 0.05 % at most, with a stated purity of 68 %.

A condensed phosphate, SHMP acts as a sequestrant and dispersant in food formulations, notably for water retention in meat and seafood and in some beverages. It interests meat, fish and beverage processors, who compare the total phosphate and the iron content.
