Gelatin, CAS 9000-70-8, jelly strength 220 +/- 10 bloom, used for food thickening and texture. Its stated purity is 99.5 % minimum, its viscosity 3.5 to 5.5 mPa.s and its moisture 15 % at most, with jelly strength and viscosity measured at 6.67 %.

Gelatin acts as a gelling and texturising agent in confectionery, desserts, dairy products and charcuterie preparations. Formulation teams rely on the bloom figure and the viscosity to pick the set they want for their products.
