Sodium Carboxymethyl Cellulose CMC, viscosity 4500 to 5000 mPa.s (1 %), degree of substitution 0.65 to 0.85. Its stated purity is 99.5 % minimum and the pH of a 1 % solution is 6.0 to 8.5; it serves for the thickening and texture of food preparations.

CMC thickens, stabilises and gives texture to ice cream, beverages, sauces and bakery goods, and is also found in cleaning products and other formulations. Formulators rely on the 1 % viscosity and the degree of substitution to choose the body they want.
