Sodium Stearoyl Lactylate (SSL), CAS 25383-99-7, white powder with a stated purity of 99.0 %. Its acid value is 60 to 80, its ester value 120 to 190 and its saponification value 180 to 250 (mgKOH/g).

A widely used emulsifier and dough conditioner, SSL goes into bakery, pastry and other emulsified food preparations. It is aimed at industrial bakers, bakery-mix producers and formulators, who set these values against their own requirements.
